Food Reviews: Gigi Hadid's Spicy Vodka Pasta

I was perusing the internet for a pasta recipe a few days ago and kept seeing article after article about a pasta dish that Gigi Hadid had shared on her Instagram. Naturally curious, I looked it up and decided to give it a try! I'll share the recipe I used and my thoughts on the dish at the end!


Yields: 2 Servings
Ingredients:
Pasta of your choice (I used spaghetti because it's what I had)
250 g pasta feeds 2 people
1/4 c extra virgin olive oil
1 clove garlic, minced (I used way more bc I love garlic)
1/4 of a shallot, diced (I used a yellow onion because that's what I had and used about half of the onion)
1/4 c tomato paste
1 tbsp vodka (I omitted)
1/2 c heavy cream (I didn't measure, just poured until it felt right)
1 tsp chili flakes (same here, I eyeballed it)
Seasonings (I used seasoning salt, garlic powder, onion powder, and black pepper)
1/4 c pasta water (I always save more just in case)
1 tbsp butter
1/4 c parmesan
Optional: chopped basil and parmesan for garnish (I used dried basil because it's what I had on hand)
Instructions:
Cook pasta according to package directions while preparing the sauce.
In a large saucepan, heat olive oil on medium. Sauté shallot/onion and garlic (I like to wait to add the garlic until the onion has slightly softened so that the garlic doesn't burn).
Add 1/4 c of tomato paste, cook until mixture has darkened/caramelized (about 4 minutes, make sure not to burn).
Add 1 tbsp of vodka and cook until it is almost evaporated (I skipped this step).
Add 1/2 c heavy cream and 1 tsp chili flakes (more if you prefer it hotter) and stir until combined.
Add seasonings of choice.
When pasta is done cooking, reserve 1/4 c (I recommend at least 1/2 c) of the water.
Add 1/4 pasta water to the sauce, along with the 1 tbsp of butter and stir until combined and the butter has melted.
Add 1/4 c parmesan cheese and stir until the cheese has melted.
Taste the sauce and adjust seasonings if necessary.
Add pasta and mix until all the pasta is coated.
Top with additional parmesan cheese and chopped basil.

*My thoughts:
I really loved how easy this dish was to make! I only dirtied one pot and one pan (all about cleaning less dishes)!
I'm not usually a fan of tomato sauce but I really enjoyed this one since it used tomato paste rather than crushed tomatoes or a typical jarred sauce. I think the cream is a nice element as well!
The recommended chili flakes were good without being too spicy! When I made it again I even added more!
The original recipe called for shallots, but I didn't have any so I used yellow onion. It still tasted great! I just finely diced the onion and it basically disappeared into the sauce but added a lot of flavor!
Overall, I really enjoyed this recipe and will surely make it again. I'm thinking of adding spinach next time!
