Everything Bagel Egg Sandwich

I definitely went through a serious bagel phase at the beginning of quarantine. Specifically, a bagel sandwich phase. I found myself eating one of these daily for a solid 3 weeks before I felt things were getting out of hand and I needed to switch it up (lol). So I thought I would share the sandwich that I couldn't get enough of!


Ingredients

  1. Bagel: The most important part of making a bagel sandwich is choosing the best bagel! I've tried many a bagel brand in my day, but there is no comparison. Dave's Killer Bread is just that--killer! The Everything bagels are truly everything you could want out of a bagel! They have some chew, aren't too dense, have noticeable flavor, are thick enough to withstand becoming a sandwich, and toast up beautifully! Did I mention that there are flax and chia seeds on the top so you're even getting some extra fiber? I can't say enough good things about these! Please try them! Link here. I split the bagel in half and broiled them on high in the oven until they had browned. No specific time here, just have to watch them until they are browned to your liking!

  2. Cream Cheese: I used a plain cream cheese for a "sauce." I applied a thin layer on both halves of the bagel, just enough to cover it!

  3. Fried Egg: I prefer a less runny yolk, but you can prepare your egg to your liking! I do think a slightly runny yolk would look beautiful with this! I will add that I didn't fry it in butter, instead I just sprayed some cooking spray in the pan.

  4. Bacon: Everything is better with bacon. Absolutely everything and especially bagel sandwiches! I cooked up two pieces of bacon in the air fryer on 370 F, patted it dry with some paper towels, and layered it on! You could also use bacon bits if you don't have bacon strips!

  5. Sautéed Spinach: I quickly sautéed a handful of spinach in olive oil, salt, pepper, garlic powder, and onion powder. Go light on the olive oil or else it'll be way too oily. I cooked it until the spinach had just wilted, then cut the heat and layered it onto the bagel!

  6. Cheddar Cheese: Last but most certainly not least, a slice of cheddar cheese to top it off!I like to let the cheese sit on the completed sandwich for a bit in order for it to melt a little. So. good.
